Roasted Maple Apple Crunch

 

Ingredients

  • 1/4 cup dried cranberries
  • 1 cup hot water
  • 4 large apples (about 2 lbs)
  • 1 tbs fresh lemon juice
  • 2 tbs unsweetened apple cider or juice
  • 2 tbs pure maple syrup
  • 1 tbs unsalted butter
  • 1/3 cup low-fat granola

 

Directions

  1. Preheat oven to 400-degrees. In a small bowl, combine cranberries and hot water and let stand.
  2. Peel, quarter and core the apples; place in a 9-inch square baking dish or glass pie pan, drizzle with lemon juice and toss well. Combine apple cider, maple syrup and butter in a small pan and heat until butter is melted.
  3. Spoon maple mixture over apples, cover pan with foil and bake for 20 minutes. Uncover pan and bake until apples are tender and slightly browned on the edge, about 25 minutes longer. Drain cranberries and sprinkle evenly on top of apples. sprinkle granola on top. Serve apples warm.

Preparation History

  • 1/2/06 - Created this today to eat in a couple of days. Haven't tried it yet but it sure looks good. Update: We did try this for a dessert and I also served it one morning for a breakfast. It's pretty easy and it tastes decent.
